Sultry Umami Dandelion Greens, Favorite Brussels Salad, Thanksgiving Thoughts


I hadn't planned on making this, a fridge bursting with work projects and all. But I seized upon this bunch of greens so bright and crisp and decided there was room for *one more* recipe, a tangent to indulge myself in the mix of cooking and shooting out-soon cookbooks and far-away magazine stories.

I realized recently that a lot of what I make is what-to-do-with-leftovers, or rescuing food, as I like to call it: creating an exciting meal from the stragglers leftover from work. Sometimes my best eating comes from this spontaneous way of working; I'm not complaining. But it isn't often I go to market and just buy food that I want to make.

A good dandelion salad can be cathartic. I was determined to make the best that I knew how.

And then it almost didn't happen... There was the month-long, seemingly never-ending move (the second in two years!) which had me maxed out. We moved house, office, and studio. Add to that, I am a collector and supply the props for nearly all that I shoot, so this was a certain kind of, ahem, undertaking…. Then hosting family in the first week at new home, new jobs to tackle….you understand.

Despite coming up short for long enough that the greens were near spent, I set aside time and relished the experience. At last.

And, ate almost the entire platter, save for a few stems for dear husband later. So he, too, would know just how magnificent it was.

Consider this at your Thanksgiving feast. It strikes a bright note to offset the many rich foods you may be serving, and is just So. Damn. Good.




Sultry-umami dandelion greens salad

1 bunch dandelion greens, rinsed, patted dry, ends trimmed
2 tsp white wine vinegar 
3 cloves garlic
6 anchovy filets
freshly cracked black pepper
about 1/3 cup good extra virgin olive oil
1/2 tsp finely chopped (rinse beforehand) preserved lemon rind, or more, to your taste*

1/2 cup dry breadcrumbs
a couple good glugs of evoo - or a tablespoon of bacon fat - to fry them in

Over medium heat in a cast iron or enameled skillet, melt bacon fat or heat olive oil until it shimmers in the pan. Add breadcrumbs and mix together. Stirring occasionally, move breadcrumbs around the pan to brown evenly, no more than 5 minutes. Transfer them to a dish.

Mash garlic and anchovies in a mortar and pestle to make a thick paste - kind of like this dressing. Add freshly cracked black pepper and the vinegar, and whisk to combine. At a bare drizzle, whisk in the olive oil to emulsify. 

If you are unsure about the consistency or if the dressing is in fact emulsifying, drizzle the oil more slowly, or stop altogether and look at the whisked mixture. Taste. Keep whisking. Add more oil as needed. The end result will be a deeply savory-tangy, velvety, uniform dressing which coats the leaves once tossed together in a large bowl.

After you have tossed the leaves and coated them well in the anchovy dress, transfer to a serving platter. Sprinkle the diced preserved lemon, then the crisp breadcrumbs over all. Give a final shower of black pepper, and serve at once.

*The idea for the preserved lemon is to impart occasional tangy-pickled citrusy-yum, rather than a heaviness of "salt". So, taste. Add the 1/2 teaspoon at first and see if it is indeed enough. You can add more as you like, or place a small dish with a bit extra beside the salad as you serve it, to pique interest, offering your guests their own taste.

 See that you don't devour every last leaf and crumb.


Yesterday I shared another great salad on Instagram, which received many requests for "recipe please?" It too makes an ideal accompaniment to your Thanksgiving plans….


Shaved Brussels sprouts & apple salad with hazelnuts and Parmesan

15-20 Brussels sprouts, rinsed and ends trimmed
3-5 Granny Smith or Pink Lady apples (any tart, crisp apple is good)
2 lemons
good olive oil
2/3 cup hazelnuts, toasted, rubbed of their skins, and crushed gently under the weight of a pan
shaved Parmigiano Reggiano
sea salt and freshly cracked pepper

Slice sprouts very thinly using a sharp knife or mandoline. Transfer the lacy pile to a large platter or serving bowl.

Slice apples into narrow wedges and add to the shaved Brussels sprouts. Cut a lemon in half and squeeze it over the apple slices to prevent oxidation. Gently toss the apples, lemon juice, and sprouts together. Drizzle olive oil over the mixture and taste for fat-acid balance. Add the other lemon - or just a half - and more oil as needed.

Top with the crushed hazelnuts. Using a vegetable peeler or cheese plane, shave Parm over all. Add freshly cracked pepper, a sprinkle of sea salt, and eat at once.

Winter Stew and Soppressata Cheese Breads at Anthology & the 2014 Annual Gift Guide



I've made a lot of stories I'd call special. But this one is special in that it is a straightforward, delicious go-to in the cold weather months. And it possesses a sense of childhood indulgence (I'm pointing at you, amazing cheese breads). Finally, this story is special because the independent makers and excellent customer service folks over at Scoutmob helped me actualize my concept in full glory.

The ceramic quail egg chili bowls set the stage for my three bean Tuscan inspired stew. Jessie Lazar makes contemporary heirloom pieces and her workmanship is delicate yet unfussy. 

As far as the stew goes, why settle for one bean when you can have the amazing textures and flavors of three? Savory and buttery great northern, flageolet, and cannellini. YUM.






This gorgeous solid walnut board made an ideal presentation for the cheat's soppressata cheesy breads.

2014 Annual Gift Guide



1. I've gone crazy for ceramics this year. There are so many talented people producing in clay, and it is easier than ever (thank you Instagram) to access their creations. It can be a bit much to keep track of, but for me, it's quite tantalizing. I have to prioritize in my line of work! That said, I am in love with Marité Acosta's pieces. They are elemental and functional, and timeless. Her work appears in the stew story, vessels holding mascarpone and marbles (no, I didn't plan that tongue-twister…).

2. Made from repurposed and sustainably harvested Mango wood, these sleek candlesticks from designer Michael Dreeben reference modernist style while incorporating traditional craft practices. They make a graphic, elegant statement in any space.

3. I only recently found out about Brooklyn woodworker Ariele Alasko's gorgeous carvings and inlay work. It seems she has a lot of fans, as her shop sells out as soon as she has new work to share. Brava Ariele! And good luck snagging one of her unique creations.

4. The photography in Bitter is stunning, and honestly is what drew me to consider making it part of my collection. Aya Brackett is the talent behind the photography, and Jennifer McLagan the author of this seductive book on the bitter taste.

5. George Steinmetz, the famed National Geographic photographer, has named is opus Desert Air. His favorite places are those most hard to get to, and he captures them from a motorized paraglider. No big deal. This book shares page-after-page of stunning images that everyone will appreciate.

6. For the fur baby in your life, this fantastic hexagonal wall-mounted work of art is the purrrfect splurge.

7. This is the board I used for the stew and cheese bread feature, and I absolutely love it. Crafted in a timeless form, I look forward to all the entertaining uses it will serve!

8. All rugs by Re:loom are hand-woven from donated and repurposed fabric, by homeless and low-income families. This initiative, based in Atlanta, creates a sustainable income for people, as well as provides affordable housing and health care. Each is a limited edition product and made with great attention to detail. One of their rugs is the backdrop to my delicious stew story, and I am eager to incorporate it into my home. :)

9. Freedom Soaps is a local brand here in Alabama. Each of Chasity Curtis' body products smells amazing and contains only the most elemental ingredients. I'm a huge fan, so much so that I am photographing her product line for a new launch in 2015. This activated charcoal soap is one of my favorites!

10. Many of us already know about the beautiful goods at Quitokeeto. The addition of this potter's beautiful pieces is no exception. They're even oven safe! Now, to be fast enough to acquire one…

11. This Oaxacan Molé Sauce is rich, smoky, and spicy in all the right ways. It's another curated item at Scoutmob, something I keep on hand for unexpected entertaining, or even to dip into by myself. Small batch, out of Portland.

12. Kind of a dream piece, this gorgeous knife incorporates reclaimed materials, like old saw blades and burlap from coffee bags. That these are dream pieces may be a good thing, as current lead time for orders is 23 months (!!). With as much work as I have in the kitchen, this knife would quickly earn its keep….

13. Last but not least is another new-to-me maker out of New York. Susan Connor hand-designs each of her creations and incorporates wood block printing to articulate them. I'm taken with so many of her works. This pillow joins my lust-for collection.

Braised Lamb Shanks at Anthology, New Work at Southern Living, Last-Minute Fab Gifts



As you might gather from the title, I have been up to many projects of late. There is much to share, and much will be revealed further, soon. Today, however, marks the fourth feature with Anthology Mag. I have loved producing and cooking up these delicious stories! This one takes a cue from all the wintry weather we've been having, and is robustly savory. Braised lamb shanks anyone?

Which brings me to..... In my love for - and earnest interest to support - local makers, I wanted to create a little gift guide this year, in case you haven't already aced the list for your dear ones. Inspired by the great photographer Andrea Gentl, who seems to effortlessly curate great collections, I thought you might like a glimpse of what I've come across that inspires me....

1. Organic Neck Warmer - Knit in Los Angeles with enormous needles, this wool roving neck warmer is totally stylish while maintaining a sense of timelessness. The simple novelty of such knitting needles is worth a glance.

2. Soup Bowl in "Crater" Glaze - Support small makers by buying through savvy online shops like Etsy. This stoneware bowl has been on my list for a while, and there's just one like it!

3. Save Bristol Bay - Some of the greatest gifts we can give will help keep the crucial fabric of our planet intact. This pristine Alaskan bay, fed by waters from nearby snow-capped peaks and small rivers threaded from wetlands and tundra, is the best wild salmon habitat on Earth. It faces imminent threat from the proposed Pebble mine (as well as adjacent proposed mining). If we lose this perfection of Nature, we will lose wild salmon as we know it.

4. The Bunad Blanket - Though not local, this indulgent, award-winning piece is woven in Norway of the finest wool fibers, and is so, so beautiful.

5. Glaze-dipped bowl from Terrain - lead-free glaze, handmade in Vermont, USA. I love so many things at Terrain...

8. Vermont Rolling Pins - I use their European pin for many of my projects, and this one is another I've coveted for some time. Hand crafted, beautiful, and functional. What else is there?

9. Classic Linen Apron - from the fine people at Quitokeeto, this timeless design is constructed in California of natural materials. The flax linen only gets better with age....

10. Beautiful Briny Sea Salt - I was delighted to discover that this small maker creates her toothsome salts right here in Alabama, and I was sold when I tasted her French Picnic blend. Perfect for rubs, as a finishing salt, and more...

11. Save the Orangutans -  Another way to feel good about giving, these imperiled, beautiful creatures could sure use our support. Currently, orangutan habitat is being eradicated (80% reduction in the last 20 years) in favor of palm plantations so that companies can use palm oil in products such as peanut butter, truffles, hygeine products, and more. Please help save these precious creatures from extinction.

12. Balsamic Fresh Fig Jam - Made in small batches in Porland, Oregon, everything from this maker is delicious. I have a collection of empty jars to prove it.

13. Excalibur Dehydrator - this splurge more than makes up for itself with the savings in longterm food costs. Perfect for those preservation-minded folks! Great for fruit leathers, drying mushrooms, and any other fresh produce you may need to save from spoilage.

However you do the holiday season, please, for your own sanity (I'm talking to myself here, with a laundry list of things to do), make room to breathe, kick up your feet to release physical stress  - preferably with a cocktail - and a hug someone (or everyone!) you love. I mean it. It's too easy to become stressed out, and time is too precious to allow all of the "things" to get in the way. And with that, onwards.... :) xxx
